  • 3 to 4 tablespoons water
  • 2 –3 cups cooked rice noodles
  • 2 tablespoons chopped scallion greens
  • 1 tablespoon toasted sesame seeds + poppy seeds

Instructions
 

  • Heat sesame oil in a skillet over medium heat. Cook tofu cubes in an even layer for about 10 minutes, flipping once or twice, until browned and crisp on all sides.
  • In a small bowl, whisk together tahini, sriracha, soy sauce, honey, vinegar, minced garlic, and grated ginger. Add 3 tablespoons of water to thin the sauce.
  • Lower the skillet heat to low, pour the tahini sauce over the tofu, and gently stir to coat. Cook until the sauce is hot and begins to bubble, about 1 minute (do not overcook).
  • Serve the tahini tofu over rice noodles. Sprinkle with sesame seeds, poppy seeds, and chopped scallions. Optionally, add a side salad like baby spinach, chopped bok choy, or shredded kale. Enjoy!
