- 2 ½ cups 300 g all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon flaky sea salt
- 1 cup + 2 tablespoons 237 g packed dark brown sugar
- ½ cup 99 g granulated sugar
- 2 teaspoons vanilla extract
- 2 large eggs at room temperature
- 1 cup milk chocolate chips
- 1 cup dark chocolate chips
- ½ cup bittersweet chocolate chips
Brown the butter: In a small saucepan, melt the butter over medium-high heat until it browns lightly (about 2 minutes). Pour into a heatproof bowl and refrigerate until it returns to room temperature (about 1 hour).
Preheat the oven to 375°F (190°C). Line 2 large baking sheets with parchment paper.
In a bowl, whisk together the flour, baking soda, and salt.
In a stand mixer bowl, beat the brown butter and both sugars for 2 minutes, until light and fluffy. Add the vanilla and eggs one at a time, mixing well after each.
Fold in the dry ingredients using a wooden spoon, then mix in all the chocolate chips.
Form large cookie dough balls (about 3 tablespoons each) and place them on the prepared baking sheets, leaving space between each cookie.
