Cowboy Caviar is a fresh, colorful dip loaded with black beans, black-eyed peas, corn, avocado, peppers, and tomatoes tossed in a zesty homemade dressing. Perfect as an appetizer or side dish for potlucks, picnics, or parties!

Ingredients
  

  • 3 Roma tomatoes seeds removed and diced
  • 2 avocados diced
  • cup diced red onion
  • 15 oz canned black beans rinsed and drained
  • 15 oz canned black-eyed peas rinsed and drained
  • 1 ½ cups frozen corn kernels thawed
  • 1 bell pepper diced
  • 1 jalapeño seeds removed and finely diced
  • cup chopped fresh cilantro
  • Tortilla chips for serving

For the Dressing:

  • cup olive oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions
 

  • In a large bowl, combine tomatoes, avocado, onion, black beans, black-eyed peas, corn, bell pepper, jalapeño, and cilantro. Toss to mix.
  • In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
  • Pour dressing over the salad and toss well to combine.
  • Refrigerate until ready to serve. Stir before serving. Serve with tortilla chips.
