: This Frito Pie is a comforting Tex-Mex casserole layered with seasoned ground beef, corn, beans, tomatoes, Fritos corn chips, and melted Mexican cheese. An easy, crowd-pleasing dinner full of flavor and crunch!

- 1 lb lean ground beef
- 1 yellow onion finely diced
- 1 packet taco seasoning or 3 tbsp homemade
- ½ cup water
- 1 tbsp chili powder
- 1 10 oz can diced tomatoes with chilies (e.g., Rotel) or salsa
- 1½ cups tomato sauce
- 1 cup frozen corn kernels thawed
- 1 15 oz can red kidney beans, drained and rinsed
- 1 9.25 oz bag Fritos® corn chips, divided
- 2 cups shredded Mexican cheese blend divided
- Sour cream for serving (optional)
Preheat oven to 350°F. Grease a 9x13-inch casserole dish.
In a skillet, brown the ground beef and onion. Drain fat.
Stir in taco seasoning, chili powder, and water. Bring to a boil, reduce heat, and simmer until thickened.
Add diced tomatoes, tomato sauce, corn, and beans. Simmer 5 minutes.
Add 4 cups of corn chips to the bottom of the baking dish. Sprinkle with 1 cup of cheese.
Spread beef mixture over the top. Sprinkle with remaining cheese.
Bake 18–20 minutes or until cheese is melted.
Top with remaining Fritos and any desired toppings like sour cream or jalapeños.
