Ingredients
  

  • 1 lb lean ground beef or mild/hot sausage
  • 16 oz processed cheese Velveeta, cubed
  • 10 oz canned diced tomatoes with green chilies like Rotel, with juices
  • ½ tsp chili powder optional

Instructions
 

  • In a large skillet over medium-high heat, cook ground beef or sausage until fully browned. Drain excess fat.
  • Reduce heat to medium.
  • Add processed cheese, canned tomatoes (with juices), and chili powder.
  • Stir continuously until the cheese is fully melted and the dip is smooth.
  • Serve warm with tortilla chips.

Notes

💡 Notes:

  • Substitute Rotel with your favorite salsa if preferred.
  • Replace Velveeta with 8 oz cream cheese and 1 cup shredded cheddar for a different flavor.
  • For a thicker dip, reduce the processed cheese to 8 oz.
  • Optional add-ins: diced jalapeños, taco seasoning, or extra cheddar.
  • Keep warm in a mini slow cooker. Add up to 1/3 cup of milk to loosen the dip as it thickens.
