- 1 lb lean ground beef or mild/hot sausage
- 16 oz processed cheese Velveeta, cubed
- 10 oz canned diced tomatoes with green chilies like Rotel, with juices
- ½ tsp chili powder optional
In a large skillet over medium-high heat, cook ground beef or sausage until fully browned. Drain excess fat.
Reduce heat to medium.
Add processed cheese, canned tomatoes (with juices), and chili powder.
Stir continuously until the cheese is fully melted and the dip is smooth.
Serve warm with tortilla chips.
💡 Notes:
-
Substitute Rotel with your favorite salsa if preferred.
-
Replace Velveeta with 8 oz cream cheese and 1 cup shredded cheddar for a different flavor.
-
For a thicker dip, reduce the processed cheese to 8 oz.
-
Optional add-ins: diced jalapeños, taco seasoning, or extra cheddar.
-
Keep warm in a mini slow cooker. Add up to 1/3 cup of milk to loosen the dip as it thickens.
